Currently got an admission to a private college, I have a BSC in business but want to study an advance diploma in hospitality and tourism management. I have a 5years experience in the field, and still currently working with one of the Marriott brand. My common spouse brother in the UK is sponsoring. Is there a possibility of getting a visa?

What college? It needs to be on the DLI list, and keep in mind you may be ineligible for a PGWP if that's your goal.
You need to prove your funds are accessible to you. Just a bank statement from your brother won't work as he could withdraw the money anytime and leave you with nothing.

Is father income tax return an important document for showing the funds for a student? For example if father can make affidavit to his son that he can support him by showing his capability through ITR document, please give your thoughts on this.
Secondly, unlike GIC, there is no difference between showing bank statement or ITR as they both are showing capability of father to support his son, what do you think?
