Well, if I were your VO, I would think of a few reasons to reject your application only based on "insufficient funds" as you said:
1. Is your tuition deposit just a deposit to get the letter of acceptance or does it cover tuition for 1 or 2 semesters?
2. What about your living expenses for the duration of your studies? Will the sponsor (uncle) cover that? Why not a closer family member like spouse or parents?
3. If uncle, and he gives a letter of sponsorship, is it made legal by a notary?
4. Finally, the most important one, if you've got a sponsor, why not them transferring the required funds to your Canadian bank account or for a GIC ? (A strong way to say your sponsorship is genuine and guaranteed)

I could only think of these, but there may be many more reasons apart from insufficient funds for a VO to reject an application and he may not mention all those points in the correspondence letter. Rejection based on insufficient funds can always be corrected. Make your case stronger by not giving chance for questions to arise. Good luck to you.
