I was wondering if buying stocks in Canadian company is considered a job, and does it help becoming a permanent resident?

No - buying stocks in a Canadian company is not considered to be a job. And no - this won't help someone get permanent residency.
 
Buying stock is not a work, it's an investment activity, indirect investment exactly. if you wanna get PR through investment, choose investor category, you give cash to canadian govt, and hold for some periods. but not buying stock, because it's an indirect investment, and you can sell those stocks whenever you want.

I will investigate more, but maybe you can tell me in what ways I give money to Canadian government. Is it govern bonds? And another question in buying land in Canada what institutions regulate real estate, is there anything I should watch for?

None of this will help you to get PR status.
