Hi, I'd Like to know if I can stay in Canada as a visitor for 1 year (6 Months+Extension) and then go back to my home country to apply for a student visa, after 2 weeks come back to Canada and study there?

Probably not the best plan. To be approved for a study visa, you have to show strong ties to your home country. That will be practically impossible to do if you've spent the last year in Canada. Possible - just a lower chance of approval.

If I get an admission letter from an institute in Canada whilst I'm there, pay the student fees and then apply from my home country?

Can I have problems to come back anyway?
