I am the primary applicant and got the ITA in Jan 2018 (CRS 463)

My wife has work experience (outside Canada) for almost 6 years in different organisations and we declared the same while submitting the ITA profile.

Will I need to show her employment records also at the time of final submission / uploading documents for the PR section or can I only show that in the personal activity and delete it completely from the Work History portion ?

You will be requested to upload your spouse's work experience documents also during your PR application, if you have mentioned the same in your express entry profile.
 
Whether it is okay , If I have not mentioned my spouse experience ? It is not adding any points to the CRS score.

If you are not claiming any points for the same, then you are free not to mention it in the work history section of your spouse in the express entry profile.
