For the "Proof of Relationship" section, I was able to provide:

• 20 pictures of us together
• Proof of financial support (only e-transfers)
• Proof that relationship is recognized by friends and family
  • screen shots of social media showing that relationship is public
  • pictures of us with the sponsor's family/friends

After reading a bunch of forums and threads, a lot of people provided over 100 pictures of their relationship. They also provided notarized documents/letters from friends and family. I was wondering if I have to go to that extent and do the same? I don't have any notarized letters and I'm not sure if I should show screen shots of our chats/messages.

For the rest of your questions, you'll have to use your judgment. Again, quality over quantity.

If the relationship and core documentation is straightforward and complete, you may not need to add additional letters of support etc.

The chats/communications: depends on your situation. If you've been living together for some time, probably not needed. If you've spent less time together, might be very important.
