Whatever personal communications that you can provide to show that you have continuously remained in contact with each other.
It does not matter which app or method of communication you have used.
You would celebrate mehndi without wife??
I think it would be much better if you can do with wife, then have your nikkah the next day or soon after.
Normal photos are fine. All of the forms are posted on the CIC website.
