My Comments:
1. I didn't stay for 2 months after I stayed there for 25 days after even I provided them with ticket, i wonder how are they saying this?
2. I informed them that my wife is doing housejob and it is mandatory requirement (provided letter to confirm this). She will finish in May and we will plan Rukhsati/Reception in Decemeber.
Barat is planned on 29th Dec and walima afterwards. What should i be sending them? My Ticket, Banquet Hall booking for Barat and Walima? Receipts of bridal dress? Receipts of my dress? Marriage invitation cards?
Should i be sending the communication proof too? like viber chats?

Please make sure to provide as much information to satisfy the visa officer as possible. Remember, this is a third person who is looking into your relationship and needs to understand the reasonings for not having the rukhsati with the Nikkah.
So, prepare to send them the following, some of which you've already mentioned:
- Flight itinerary
- Hall books/payment receipts
- Cards/Invitations
- Receipts of the dresses
- Communications (Viber, FB, Whatsapp, Snapchat etc) between you and your spouse where the details of rukhsati are specifically being discussed
- Gift exchanges
Anything you can solidify your relationship and the intention of performing rukhsati. In your cover letter, make sure to reiterate your reason for not performing rukhsati at the time of the marriage and that you are planning on XXX date due to XXX reason.
