We applied for sponsorship June 10th,2021 .Now, we have AOR and biometrics. Now my wife is in Canada we have a new baby and she takes her EI(Employment insurance).Do we need to inform IRCC about this that she started to take EI..Thank you

No, you don't. No need to notify IRCC about EI. Just make sure she doesn't take social assistance / welfare.
