My fiance and I are planning to get married in Canada next year (2018) and he is a US citizen and Im a permanent resident of Canada (since 1995).

After we get married he still needs to go back to the states to tie up lose ends with work. We will be apart for a few months after the wedding. My question is, Can we start the sponsorship application right away (after getting married) and still be allowed to visit each other in between those few months until he moves here permanently?

So, you can apply right away, but you´ll need your marriage certificate which takes a few weeks to get issued, so you´ll have to wait for that. If he needs to go back to the US maybe it´s better for him to apply Outland, that way he can travel in and out of Canada. However, he cannot apply for a Work Permit together with the PR application.
If he applies Inland, he can apply for a Work Permit at the same time, but he is expected to remain in Canada while PR in process. Just check which option is best for your situation.
