My fiance and I are planning to get married in Canada next year (2018) and he is a US citizen and Im a permanent resident of Canada (since 1995).

After we get married he still needs to go back to the states to tie up lose ends with work. We will be apart for a few months after the wedding. My question is, Can we start the sponsorship application right away (after getting married) and still be allowed to visit each other in between those few months until he moves here permanently?

Yes. As a PR you must be residing in Canada to submit a PR app and continue residing in Canada while it's processing. However you can take short/temporary vacations outside Canada during the process.

Or he can come to Canada as a visitor while the PR app is processing.
