Hi guys, one more question. I'm planning to have a wedding ceremony in DEC. And hopefully send off our application before new years. I want her to start getting her medical checkup and criminal background checks and whatever else she needs done now. Is this too early though?
It's too early. The police check is only valid for 3 months from when you receive it, meaning you must submit your PR application with a police report received less than 3 months prior. In Korea getting the police check is super easy. You just go to the necessary office and have them print it out for you on the same day. Best to get this in Dec, closer to when you will submit your application.

The medical is valid in general for 1 year. So this should be the very last thing you do before submitting the application. If your wife did the medical today, but you didn't submit the app until say January 2014... then if her application is still in processing Oct 2014, they may force her to re-do the medical again. So best to push this back as far as possible to be safe.

Is there a list of acceptable places in Seoul to get this stuff done?
List of designated places in Korea to do the medical are found here: http://www.cic.gc.ca/pp-md/pp-list.aspx

Other docs she will need are:
For nationals of Korea:
• Family Relation Certificate and one certified true translation into French or English of your Family Relation Certificate. This document should have been recently issued.
• Marriage Relation Certificate and one certified true translation into French or English
• Old (deleted) Family Census Register and one certified true translation into French or English

I believe I need letter of employment for last 12 months. I will be having ceremony in Dec 8, however I will quit my job on Dec 27 in order to go to Korea for this. I've already told my employer an they are okay with this. SHould I get my employment letter now? SHould I get them to write that I will quit at the end of November or leave that out? I've also been with them less than 12 months. So I guess I need to get a letter from my previous employer as well?

I was actually planning to use both of these employers as "letters of reference" to state that they have knowledge of my wife's relationship with me, however if they are employer letters then should I still use them as reference letters?
Sure, by all means you can use employer letter as a testimonial if your boss or whoever writes the letter has personal knowledge of your relationship. In fact this IMO is more "professional" than a friends or family reference letter and would be great proof of valid relationship.

As to the details on the letter of employment and how strict is CIC is with the 12-months thing... i'm not sure so others will need to advise.
