My spouse has been diagnosed with pancreatic cancer and not being given a good prognosis. We are in process of appeal and still waiting for date for his interview. What happens should he pass away prior to that date. Am I still eligible to receive my Visa to come to Canada or does the process stop completely and I am denied entry??

Sorry about your sponsor, but if he succumbs the application is finished and you would be denied entry.

Are any stipulations as to time before I can apply again SHOULD I choose to ever get married again to a Canadian? Would immgration look unfavorably because I have applied before or would my previous circumstances be taken into consideration?

One would think that at a time like this you might actually be more concerned about the well-being of your sponsor with cancer, but you are instead asking about your visa??! What reason do you have to be in Canada were it not for your spouse?
