I'm relatively new in this, I need a little clarification on the difference between SINP EE and OID ? which better and why? and how to direct my application in each direction? I'll still wait for the province opening in both cases?

Pls advise as detailed as possible, thanks in advance.

SINP OID will take anywhere between 4 to 9 months to get you the nomination.
Whereas, SINP EE will fetch you the nomination within 2 to 5 months. Huge difference in processing time.

Best thing to do now is be ready with all your documents and forms filled up for SINP EE (if you are already eligible) and complete the online application steps. There are maximum chances that SINP EE will open for another intake of 500 applicants anytime within the next 40 to 60 days.
Once it is opened, the cap gets filled up within 24 to 72 hours. Hence you should be prepared now.

I've finalized my SINP profile (finally) I heard they open the 20th of every month is that's true? and what happens after you get and accept the nomination on the mycic account? does they re verify all the info again? or proceed to the criminal record and health checks?

SINP EE can open up anytime during the month. They simply notify on their website that they are open and within 1 to 3 days of this announcement, the cap gets filled. So, it is very important to be prepared in advance.
Once you receive the nomination and accept it in my CIC account, you get additional 600 CRS points which gets you ultimately the ITA.
IRCC has its own process of submission of all documents along with PCCs and medical report. You provide IRCC will all the documents that you used for nomination purpose plus PCCs and medical report.

Very true coz it is paper based application even for PR.
