I worked as a contractor developer for two months. Then I left that job and started a new full time job.
I didn't get any points for that old job. I don't have any reference letter but I have the pay stubs from my old job.
Should I mention this job in my work history even though I don't have the reference letter?
If I don't mention will that be hiding information? Or should I just upload the paystubs mentioning it in work history?

TIA.

If you are not claiming immigration CRS points for the job then you don't need to provide any proofs. You will still mention this job in the 'personal history' section of your profile but not in the 'work history'. The only job mentioned in 'work history' is the one you are getting points for. This is completely legal and recommended by many seniors here.
