Yeah, that's fine. Personally, I just copy/pasted all our FB messages into Word, edited it to remove excess space, and sent it like that, but it wasn't our "main" proof. (We were living together, so we had things like a rental lease, joint benefits, cell phones, etc.)
If you want to it look more official for Immigration because it's your primary communication, you can use the Snipping Tool. Now, keep in mind, you don't have to send every single conversation. You just need to show regular contact with the conversations showing a relationship. So you can show 1 per week, per month, etc. Just add a note to the file saying this is a sample of your regular Facebook contact and you can provide a complete overview if needed. Figure out what you're comfortable with and go from there.
