She will need her passport and birth certificate to get married in Canada.
If you want to ensure that she doesn't have to leave, you would sponsor her inland after getting married. You can find the forms here: http://www.cic.gc.ca/english/information/applications/spouse.asp
The processing time is something like 8 months to get first stage approval at which time she can apply for an open work permit and another 8 to get PR, give or take, they are averages so some applications are fast, some are slow. She should not leave Canada during the processing time because if she does, she risks losing her application. A requirement of inland is staying in Canada.
If she is not committed to staying in Canada for the duration, you can sponsor her outland which doesn't actually mean she must be outside Canada, she can be visiting you when you apply and leave later if she must and the application will continue to get processed. You would find the forms for that here: http://www.cic.gc.ca/english/information/applications/fc.asp
Whichever you pick, you have to make sure to apply to extend her visit visa before her status expires.
