I am at the final stage of completing my application.

In Question 5 of Schedule 8 form, it asks for my Occupation in Canada in the past 3 years.

During the past three years, I was a full-time student in Canada from May 1, 2010 to December 20, 2010

Then, I worked full-time from December 21, 2010 to August 24, 2012.

Do I need to include my occupation (graduate student) from May 1, 2010 to December 20, 2010 in question 5 occupation list. Graduate Student does not have any NOC code as well.

No - you dont need to mention there about your time spent as student.

Question 5 in the schedule 8 clearly asks about your Work Experience. So your time spend as full time student should not be mentioned here, but only about your work experience and employer details.

The very next questions asks if you were a full time student while working at the same time.
