Can anyone suggest me while mentioning salary in experience letter on which currency should we write? Similarly, should we write an annual salary or even monthly salary is fine?

Annually is good and currency that you are earning in is fine.

Does it have to be annual salary? Some of my experience is under a year long, and at my current job I've gotten two small raises over the past year so "current monthly salary" would make more sense.

You are not declaring income tax man ...
Either one of them is fine... it really depends on your organization what they would like to mention...
