Return flight or one way?

Hi there

Is it necessary to book return flights as part of proof of intended return to home country if going to Canada on a study/work permit, and if so, how does this work ito flight costs, etc?

In the event that our stay in Canada gets extended (PGWP, or extended studies, etc), how does this affect the return flight booking?

You do not need a return flight on a study or work permit.

In any case you cannot buy a return from an airline more than 11 months out from date of purchase and a study or work permit will likely be longer than that. Even if someone bought a return and kept extending it unless it was a fully flexible expensive ticket the penalties for changing would soon mount up but dont need one anyway.
