Is it okay if I include only the work experience mentioned in my Express entry profile or should I add all the previous work experience?

I have 16 plus years of experience in IT but claimed points only for my NOC in my express entry profile (past 5 years).

IRCC says that you should list all experience.

Consider this, if you skip those 11 years of experience, how will you justify that time gap in personal history? You'll most likely have to lie in that case. Better show your employment.
