I am not sure if someone has faced the exact same situation before.. but here goes nothing.

I have a situation that is a bit confusing.

I live in Dubai, UAE.
Employment A ended on 20th June and I received ITA yesterday. With the employment ended, my residency visa in Dubai is also canceled. As per the law, I have 30 days to get a new visa.

I have a few offers from various employers that I am considering and I am not sure which one I will choose. Is it okay if I submit my passport copy now with a canceled stamp and mention the situation in LoE and once I have my new visa, I can submit the web form with my new visa and employment details?

Or should I just wait till I get my new visa and then submit my application?

It will not have a material impact on your application, for your e-apr correct your work history by stating correct end date of your employment and period post that as unemployed. It will not impact your points provided you have sufficient work experience to claim max points for your employment.
Whether you are employed or not at time of e-apr does not have a bearing as long as you state all the facts correctly in your application and you meet eligibility and CRS score is not affected. And last bit, hope you will still be able to provide reference letters for your employment which just ended.

That's not the concern at all. I have put an end date to the employment plus added the current period as unemployed. I also have the reference letter which is not an issue.
The only concern is that my passport has the visa stamp of my resident country (uae) which says 'canceled'. Hence, the question whether I can submit it as it is and offer an explanation or wait till I get a new visa.

Unless it has been cancelled because of misconduct/criminality it is fine. If you want you can write a LoE that as on e-apr date you are still resident of UAE as you get 30 days to find a new employer and get a visa. And if in these 30 days you do not get one you will go back to home country in which case you will raise a CSE to update IRCC with your new address and resident country. It is fairly normal.

All that IRCC cares about is that you have a valid status in the country of your residence. Since after your employment ended, you have 30 days, which is the general norm for all visas across the globe, you can go ahead and submit your application. Once you get a new visa, just update IRCC via CSE.
