My wife and I moved back to Canada on 2011 March and we are both working right now.
We are thinking travel back home for visiting around April, but our PR card was already expired.
We will pass the 730 days on March 2013.
My question is, can we renew the card right now together with some supporting documents, like employment letter to prove that we are staying at Canada?

No. You can't apply to renew your PR cards until you have actually met the residency requirement. If you apply before you have met the residency requirement, you can expect longer than normal processing times followed by a refusal.
 
We are now passed 730 days, however, during this time, we took one month off and travel back to home country for visit.
My question is, will it take 30 days away, so we have to wait another 30 days for the renewal? Thanks.
 
Look at the renewal application forms. They ask you if you spent 1095 days or more outside Canada in the past 5 years. Did you? If you did, you do not meet the residency obligation and must wait until you do in order to renew.

My number of days is 1076 (outside Canada), so is it fine?
And when I submit the application, what kind of documents should I provide? Old PR card copy?Passport copy?

Read the instructions on what to include. Make copies of all the pages of your passport that have stamps on them and also include some proof of having been in Canada if you can.
