There is an exception to this requirement if you have a Canadian citizen spouse. Living abroad with your Canadian citizen spouse counts towards your permanent residency residence requirement
As long as your sponsor is a Canadian citizen, it's perfectly fine. It just means you need to submit a bit more proof. For sponsors living outside of Canada, they need to submit proof and a plan that they will indeed be returning to Canada once the sponsorship is granted. I would recommend searching the forum for "sponsor living outside Canada" because it's a common thing to be discussed. Ultimately as long as you can provide the proof it will not be an issue

If you are going to notify them that you've moved it would probably be best to submit that, along with a PDF of your proofs, all at once via the IRCC web form. I would not wait for them to request it, be proactive about it and that will help save time in your processing.
Think the issue is going to be that in order to get your PR approved you have to show intent to return to Canada. Usually people have to show where they plan on living, a Canadian job offer or search for a job, etc

If a sponsor is living outside of Canada, they have to show proof that they will return when the app is approved. Given that you don't plan to return for 1-2 years, you won't really be able to do that. It is very possible that your app will be refused and you will be told to apply when ready to move back to Canada permanently. Even if the app is refused, it is possible that CBSA may refuse to land you if they don't think you guys are moving back to Canada; this happened 1-2 years back when the sponsor was studying in the US and not planning to return for a few years.
