My wife's application has been sent too Hong Kong. It has reached the IP stage. Has been since May 05/2015. Her physical exam is now past the one year point. Will she be asked to seek a further physical exam ?

From what I understand, you have to have valid medicals to be able to enter Canada...They will not issue a visa unless your medicals are valid and you are able to travel (land in Canada) before they expire.
I am in the same situation as you, with regards to expired medical.

Its a similar situation for most November/December applicants from Hong Kong VO. Most likely you will be asked to redo medical, you can either wait for their request or do it yourself upfront to save some time.
