Hi,

I am an exchange student in Canada. The semester ends mid-April and my study permit is valid until July 29th.

Can I travel outside of Canada (not US) and re-enter with my study permit before it expires even though school is technically over?

I couldn't find anything on CIC website.

You study permit is expires automatically 90 days after completion of your studies, if you are one from visa exempt nationals or have a valid temporary visa , the you are good to go

I'll complicate things a little bit. I also have submitted an application for a sponsorship visa (my partner is Canadian), and I assume they will be able to see it in their system. Is that expected to cause any trouble?
 
In your case, the only thing that will be checked when you enter Canada would be a valid visa stamped in your passport. If the visa is expired you will be denied entry.

Your study permit/work or any kind of 'permit' will not matter.
