Questions about declaring work experience for Express Entry

Hello all,
I have a signed confirmation from one of my employers for 3 years 1 month of work I have done with them. This work experience maxes out my points at 481. For the last 8 months, I have worked as a volunteer unpaid researcher (20h a week) with a University while trying to build my own startup. The University in question is being unresponsive in giving me a signed letter saying I worked with them. Also, this month, I started working for a new company.

Now that you have some context, my questions are:
  1. Do I need to state my last 8 months unpaid work to Canadian authorities in the form of the form and/or signed employment letter?
  2. Do I have to state my work with my current employer to Canadian authorities?
  3. In the declaration of work experience post the ITA (prior to submitting docs), I have stated just my 3 years 1 mo of past work ex. However, in my personal history section, I have included everything including my work with the university and the current job I have. I have listed both as 'employment'. Will this 'discrepancy' be an issue?
  4. For any of the above (or all), do I have to submit an LOE?
Thank you to all who reply. I appreciate your help

Put your 3 year 1 month work experience in work history and provide proper supporting documents.

List everything else in personal history post ITA as employments. No documents needed

No LOE needed

Thank you for replying. The only document I am submitting for the 3y1mo work ex is a signed letter of employment with job description, work hours etc. That should be enough right?
