Hello! In the application for open work permit there is a question "details of intended work" which we have no idea of yet should we just leave empty ? Thank you!

You would select under 1 - A) "Open work permit" and for the #2 section that you're talking about, it would be N/A or Not Applicable. As you don't have an offer of employment.
