No. The process starts the day your documents are received by the Visa Officer. The deadline of xx days is only for visa officer to open & review the applicant file, if the requested document or instructions were not received within the 30 days and do the needful.
I sent my requested documents in, they were signed for 11/5 ( the deadline was 11/9) my file went 'in process' 12/29 so you may have to sit tight for a bit before you hear anything. Hopefully, yours will go faster as it's not during the holidays.

Can I ask you that you send an original signed documents by mail or just by email? becouse I've changed my Personal History ( I add my vacation and one school) and my schudle was change. I'm wonderig now if they want original or scan it's ok ?

Sometimes they'll ask you for originals. I mailed certified copies of my son's birth certificate and the original copies of the forms requested. I've heard of people sending scanned copies as well. The police certificates and photos must be originals but the forms, as long as they are signed can be scanned copies as per an email I received.

that's not necessarily true. how quickly the process continues depends on the visa office and the officer handling the file. there are people whose applications continue processing as soon as the informaiton is received AND there are plenty of people whose applications don't do anything until AFTER the "bring forward date" (The due date listed in the request). not all visa offices are the same, so it's irresponsible to say that the process starts the day the documents are received by the visa officer. we know from examples on this forum, that is certainly NOT true in all cases. the only absolute when it comes to cic is that there is very little consistency.
