Query regarding work experience gap and no work exp certificate

I am planning to apply through EE next year.I have 5years work experience in India but now m residing in midole east and not worked here on full time basis.Also I did not receive my work exp certificate from my last organisation due to some HR issues even though I worked their for almost 2years.
My query is can I show these 2years as work exp on the basis of appointment letter and accepted resignation letter??
Also how exactly is work experience calculated?
Do the CIC actually verify work exp of other countries and how?

they have the right to call or ask for an interview( which is very rare) to verify your work experience. if i were you i would say i have to year work experience. then add a letter of explanation saying why i can't show a reference letter for it and attach the documents you have as a proof.

In the Express Entry system, for work experience, you will get maximum points for 3 years and above. So, if I understand you correctly, you already have 5 years of experience for which you have all the documents. You are concerned about the 2 years of work experience in Middle East for which you do not have all the documents. Since you already have 5 years of experience (it already meets the requirement), you can opt not to use the 2 years of experience to claim points (since you do not have the necessary documents) and show only the other 5 years.
