I will keep it short
Our background
Primary Applicant
- My wife - Age 27 - Holds Mtech from Vellore Institute - Equivalent to Masters and Have 3-year work experience in India. No education or experience in Canada.
Spouse - Myself - Age 32 - Holds MBA from Christ University and Engg from MG University Kerala - Equivalent to Masters in CES and Equivalent to a double degree in WES. Have 8 years of work experience in India. No education or experience in Canada

Following are the confusions
1. WES is faster for ECA, but as said above I will get only a double degree vs Masters's in CES. My Wife's University has a direct tie-up with WES and will be much faster. So should we start the express entry process with my Wife's profile and My education as None (Approx 462 points)? Then when my CES comes, add that to the same application to get additional points? (Approx 472 points)
2. We can consider studying in Canada as another option, as we want to reach there faster. Do you think waiting for PR now will make things faster as Canada is getting opened in slots and there is a chance of draws soon?
3. If study should we take a 1-year course for her and me going in Spouse open work permit. But Is there a risk of we not getting PR in the next 1 year or stay back. Is there a risk of me not able to work there during the time of switching her study visa to a work permit and then applying for my work permit?

1) You can go ahead create the profile and add or remove details until the ITA is received. After ITA changes have to be informed to IRCC through webform. If you are looking at FSW, a high competitive CRS is needed (475 +) to make it this year. Alternatively, you can also look at getting a PNP nomination based on the NOC and other eligibility requirements.

2) Studying is entirely upto your decision. Even if Canada opens up, the PRs are not going to be granted early due to the high backlogs. Do note, if you wish to go on a study visa it is best not to have any active EE profile which can complicate the intention to study. Also, this path requires that your wife takes up IELTS academic for English test and not General test.

3) Considering you do get an admission for this year (I doubt about Sept intake), take a look at the post study visa requirements for a one year course. Am not sure of what intended risk are you suggesting for a PR, but if you are eligible post study for EE, there's no issue in PR process.
It is best to research here in the forum on how students moved from student visa to applying for a PR.

Overall, the suggestion would be to do a pros vs cons of choosing the path then decide forward.
