I was wondering if it's possible to apply to the Quebec skilled work and express entry at the same time. I found on the website that the processing time for the QSW is 18 months, but I'd like to know if it's possible to trust in that time given?

No, it's not a good idea. Applying for both will likely create problems for you. The Quebec Skilled Worker program requires you to show intent to settle in the province of Quebec. The FSW / Express Entry program requires you to show intent to settle outside of Quebec. You should pick one and not apply for both.

I can't comment on Quebec program processing times. I would recommend you read through the posts in the Quebec Skilled Worker section of the forum.
Keep in mind that there have been no FSW / Express Entry draws since December 2020 (over a year) and no one knows when and if they will restart.
