I'm just asking this for peace of mind, so that I know I have all my ducks in a row...

My husband has been a PR since July 2013 and we'll be applying for his citizenship soon. I know that there used to be a 2 year cohabitation requirement for spousal PRs. Do I need to supply any documents *not* listed in the Document Checklist? Should I be providing proof of things listed on the application form like places of employment and residence? Any thing to do with our relationship, cohabiting, etc?

I should just add that he hasn't left the country once during the past 4 years. I assume they will know that? (He did buy a plane ticket once but missed his flight due to traffic.)

I just don't know whether I'm supposed to provide lots of documentary proof of residence when they haven't specifically asked for it in an RQ, and we've been in Canada the whole time.

No, you don't need to provide evidence of cohabitation. Just provide what is requested.
