I'm currently applying for Express Entry and one of the questions is "have you ever been in a common law relationship?" My situation is I was in a common law relationship which ended in January 2018. The break up was amicable but we still own a house together. Will a letter of explanation be sufficient to prove that I am no longer in a common law relationship, or is there an official document I need?

If you have not completed one year in your relationship, then its not a common-law relation as per IRCC. File PR as a single applicant because common-law relationship is never registered anywhere in govt. document.

Did it ask for proof? It only asked if you were ever in one, you said yes, they you put the the date from and to, and its done

In the information bubble next to "Additional info - Letter of Explanation", it says "This should be used to provide documentation to support a declaration of status as “legally separated” (e.g., a letter of explanation, legal documents, etc.), if applicable". I wasn't sure if that was just generic advice for everyone, or they're specifically asking me to provide some kind of proof of separation.

Ok, since you have no documentation, then you can use letter of explanation
