Hello everybody,
my fiancè and I are preparing all the documents for the applycation as common law partners, inland class. we are cohabiting here in canada since september but we used to live together in italy for more than 2 years. the problem is that we used to live at his parents house so we don't have any lease or rental contract to prove the cohabitation. we don't even have bills or other utilities that showing our names. so how can we prove that? maybe a letter from his parents where they declare we have lived in the same house with them could work?

That is correct! A notarized affidavit coming from parents and friends is a proof.
If you have letters, emails, daily chat conversation you need to print it too. Dont forget a pictures too if you have any. If you attended an activity like event, celebration or sports together provide documents for that. Think out of the box.

Also, explain in your cover letter that you live in his parents house which is convenient for both of you. If both of you can provide a document stating the same address ( his parents house ) that would be good too.

Ensure that is written in english to avoid translation.

Did you receive any mail while you were at his parent's house?? That may help your case also.

You must have some other proofs. Payslips? IDs? Tax returns? Phone bills? Bank/credit card statements? Any mail in 2 years?
