Is it safe to assume that the processing office assigned to your case would be the one that is physically closest to where you live / applied from?

Correct. Unless your case is deemed non-routine...in that case it gets forwarded on to a specific processing office that handles those types of applications.

I live in Etobicoke near Islington subway station (Michael Power Place), would that be Toronto or Mississauga processing centre?

Could try calling them and asking (not sure if this works). Otherwise, you'll know once you get the test invite (or fingerprint request). Although, do keep in mind that IRCC has been bouncing files around depending on how busy a CPC is. Your file could end up at one CPC for the test, and another for oath, within the GTA region.
