So what do people do?

Hi, my case was very similar to your. Landing for 27th Mar in Vancouver was cancelled. WP was expiring 5-Aug 2020.
I did the same - sent web form on 8-May saying Wp is expiring and requested for telephonic interview. Received generic reply on 12-May saying to just wait.
Received PR confirmation email on 25-May -- about 23 days later.
[One positive news for me before was - MSP care card now can remain active even during implied status due to Covid. This was not so last year. Thanks]

I also got my passport and COPR . Can I send email to this address or should I wait for their instructions???

I will say make a phone call to IRCC call center first and see what they say. Then, sending a polite request to that email won't hurt I think.
