Submit webform and ask for an extension, I did the same and attached proof of documents delivered to the embassy (courier proof of delivery). They give you extra time

Not sure if the immigration officer will accept your pcc if somebody does it for you, it is up to them if they accept or not because you are in Canada.

I've sent total 3 emails and only the first one got a reply from them acknowledging the reception of my documents on March 15th. On the email they sent, they only mentioned that my documents will be reviewed and if they are complete, they will be sent to Mexican authorities within the next few weeks and then it takes about 40 to 60 business days to obtain the PCC. It also mentions that if we have a deadline to submit this certificate, we should request an extension via webform.
What it makes me so frustrated is that they don't answer the emails at all, even when it clearly mentions "Updates on your police certificate process can only be obtained through this email address upon request."
Last follow up email I sent was on May 5th and nothing so far :/
Well at least they've come back to you someway... I've been sending an email every week but they have never updated me on anything. Hopefully they will soon

For this step, you should get a request letter from IRCC with all the specifics, including the information of the visa office that is processing your case.
Depending on the program you are applying with, the address could change, but they normally are located in Sydney, NS.

Yes, at least got the first one replied. But is hard to know when did they sent our documents and start counting the 40-60 business days like they mentioned. Also the problem is that they take the documents to the FGR in bulk, so for how long they wait before they take your docs to the fiscalia?... so stressful
My application was approved in principle and imm send me a letter asking me for the police certificate and a medical test,
At the end of the letter it shows me one address in Toronto with the name of the senior immigration officer approving my application.
I assume that's the address I should write right?
I understand I should send everything to the Canadian Embassy in Mexico city.
Should I attach a "carta poder" too? should I summit a letter from the Mexican Consulate too?

If you are in Canada the process need to be done throughout the embassy according to the IRCC website, if you are living in Mexico you can do it yourself. Although, I have heard some people living in Canada, sent their relatives to do the process for them, is up to IRCC officer discretion if they accept it or not. If you go to the website and check the process it clearly mentions "if you do it by yourself it won't be accepted" and you might end up losing that time and money spent if they don't accept it. In my case, it didn't worth the risk and decided to do it the right way even if it's the longest.
