According to my info, sending PR card by courier outside Canada is easy and many people have done it. Just make sure to use a trackable courier like Aramex, Fedex, UPS etc. I think you dont need to tell the courier that it is a PR card. Just mention that these are 'original documents' etc. To see know examples just type 'PR card overseas' or 'PR card courier' in the search field on the top right side of the canadavisa forum and you should get some results.
As an example, there is a guest house in Toronto safehomestay.com which is offering the service of PR card courier to their guests for a fee. See their website. So its not a big deal.
The tough part is to get a PR card issued while you are actually not in Canada. CIC has been known to ask for new photos or interview on a random basis to ensure that the applicants are inside Canada. I hope it doesn't come to that in your case.
