There's just one visa officer. The one interviewing my husband and me was very rude, so much so that she seemed racist (my husband is black, I'm white). Make sure to emphasize that you don't care about the age difference and religious difference. If you, your wife, or your families have precedents, that would be a good thing to mention. For example, if all your previous relationships have been with older women, or your wife previously had a much younger boyfriend, or if in your family or her family marrying someone of a different religion is common - mention this!
