Hi. I was answering the original poster, not you. But to answer you questions:
1) Regarding your self-employed period of 3 years, CIC are unlikely to just take your word for it so you may need at least some references for the customers/branches you worked at etc. Did you actually have your own premises / did you work solely for yourself?
However, if you have 4 previous years experience which you can get references for, then this will satisfy both the minimum requirement for 1 year's full-time experience in the NOC, and also the maximum 4 years' worth of employment for the 67-points requirement. Therefore I suggest you just get whatever you can for the 3 year self-employment period. On your forms CIC will ask you in which order you want them to assess the work experience, so I would start with the 4 year period if you can get solid references for that.
2) Proof of funding - this must be sent with the initial application. However, at this stage proof of equity in property can be considered if you submit 3 valuations and a mortgage letter. When it comes to completing your record of landing, at that stage the funds must be in liquid (cash in bank) format and ideally in a readily transferrable currency (CAD, USD, Euro or UK Sterling).
3) No - cousins do not count for adaptability, only those relatives which are on the list in the forms (basically mother/father/sister/brother/grand parents/uncle/aunt etc).
