Past employment letters questions

Hello guys,
I'm preparing past employment letters for my PR and need some help for a few things. Now I'm very familiar with US immigration and how to prepare letters but not so much with Canadian immigration. Right now I'm already working in Canada as a chef. I've been working in that field for almost 15 years now, and most of my past employers agreed to write a reference letter. However:
-some of them wrote a letter for me a few years ago and now that I'm asking again, they're suggesting to duplicate it and give it for them to sign, as the restaurant doesn't exist anymore. I'm worried that having a letter without company letterhead is going to be a problem; in fact, most restaurants I worked for don't have company letterhead on their letters. Will this be a problem?
-is it possible to use "old letters" (4 years old) that I already used for US immigration, as long as the contact information is up to date?
-at some point in my career, I was working as a freelance. Those 4 years of working in my own company are hard to justify, as I can't just write myself a reference letters. I was thinking about asking my clients about those letters, and was wondering if they could write them in French (I'm French and most of my experience was in France). Would it be acceptable?

I think you can use old letters. I did not ask any letter from my previous employers (7 years ago), I just submitted my end of contract letter (certificat de travail) and that was enough.
