I am sponsoring my parents, application 2019 . I got sponsor approval already and waiting for the next step, which seems taking forever because of covid excuse

My problem is I was experience a really bad year financially in 2021 which lead to my income drop, yes, thank covid.

So my question is Do we have to maintain the income until my parents land?

what will happen if I miss a year income after receiving sponsor approval and my parents application is still in process?

By the rules yes, you must continue to meet the minimum income requirements until your parents are approved for PR. If IRCC requests updated income information and determines you no longer meet LICO after being approved as a sponsor, then you can expect the application to be refused for no longer meeting the sponsorship requirements.

However realistically, IRCC often does not ask for updated LICO information. So what you have to do is hope they don't check your income during processing.

thank you, do you know where can I find that info on IRCC website?

on eligible page, they only mention about 3 years income before the date I submitted application, they did not mention anything about maintaining the income (https://www.cic.gc.ca/english/helpcentre/answer.asp?qnum=1445&top=14)

You need to look at the guide:

Do I (the sponsor) have to continue to meet the income requirements during the processing of the application?
If new information indicates that you may no longer meet the income requirements, your income may be reassessed at any time during processing. Your income could also be reassessed if more than 12 months have passed between the dates since we received your application and when processing of the application begins.

You and your co-signer, if applicable, must meet the amounts outlined in the Income for Parents and Grandparents Sponsorship from the date on which IRCC receives your sponsorship application until the day your family members become permanent residents of Canada.

I don't. I'm assuming it's a broad statement that a number of difference scenarios might fit into.
