Hi, my parents' visitor visa has been approved, and they are visiting my family, but they don't understand or speak English. How are they going to answer immigration officer questions? Also, what type of questions will be asked, considering they are both senior citizens?

They have translators at the airport.

It's not possible to say for sure. Generally questions like who they are visiting and how long they will be in Canada but there may be other questions.
 
Specifically, for the question about how long they will stay, what should be the answer if they planning to stay for 6 months?

who are you going to visit? how long will you stay in Canada? what is that person doing in Canada ? what is his/her status? how much cash do you have now? also, they are so nice and try to ask/communicate in the simplest way or using the simple words to be understandable. no worries at all.
 
You can also give them a piece of paper with the information and general information like your address, how long they would like to stay and include your phone number. If entering a large international airport translation (in person or on the phone) will be available especially if it is a commonly spoken language in Canada.
