Even the guide says to mention the income separately as it can be different for each year.I had asked the same question and the agent told me it's ok to club your income in a single row if you are working for the same employer. The agents don't have all the details they also answer from the Guide.

1. Sponsor can sign forms, scan it, and send back to Parents. Parents then can sign the forms where required and Mail to IRCC.

I asked 4-5 times if signing the forms by hand and scanning to send back is okay? and all times she said yes. She just said, it has to be signed by HAND and not electronically.

For Example, if you are working for employer 'X' since 2 June 2017 until now.
Then you put it like this
From: 1-Jan-2019 to Present, then include your earning to date when you sign the form.
From: 1-Jan-2018 to 31-Dec-2018, include your pay for that year.
From: 2 June 2017 To 31 Dec 2017. In Gross Income put whatever you earned.
Then From 1 Jan 2017 to 1 June 2017 if you were working with employer' Y' then put out that details.
Also, if you work for multiple employer at same time, then put that details even if it is overlapping.

In the form IMM1344, do I enter citizen as status and then submit a letter explaining why I did not submit as PR based on ROI?

Thanks.There isn't any sample letter for this. You just write a regular letter explaining in details what happened. That is all needed.
But does your income meet the the correct family size? If not, you might be rejected though...

You can still try to apply although you should get rejected.
In any case why did your friend declare he met income requirements and submit EOI when he knew he didn't?
If he was hoping for some exception then your friend should follow through and submit an application. After all they did invite him right?
