Does anyone have any recommendations of what should be in letters from relatives and friends to help demonstrate I will reside in Canada with spouse? I don't have a job lined up yet, or property or bank account in Canada - only really letters and expiring foreign residency permit as proof.

Maybe you dear reader can suggest something more?

"TractorG and spouse confirmed that they are moving back to Canada", "we have discussed this on many occasions", "they have been looking at homes here" etc. If you have chats/texts/emails showing conversations with people about returning, attach them to their letter. If someone is providing you with accommodation when you arrive or helping set you up with a job/home/etc., they should include that. If there is an event or something that you will be attending, they can include that (I had a friend getting married in Canada the next year, so she confirmed my intention to move back and attend with my partner). Basically, anything they know about plans you've made to return.
 
They can also include any way they are willing to help you resettle in Canada. Ex. Place to stay till you find your own, car to use till you find your own, financial support if necessary, etc.
