For proof of funds can I use an online bank statement?

it depends on how this is regulated in your country. For example in Poland it is allowed and is a common practice that we get online statements only with neither signature nor the bank's stamp. There is, though, written that according to the Banking Act the document is valid without these two.

I was just going to print something from online, will this be excepted to stamps etc...

It might actually depend on the country and the bank itself. It its a well known bank in a good reputed country, they might accept it.
