Yes as far as I know you can update your profile unless and until the factors on which you wete granted the nomination are not affected. If this work experience's NOC got you points and nomination, you should not change it as this would affect your eligibility.
Personally, I think, the best way to do is to mention this under Personal History when you get an ITA. You can check with senior members on the forum/ people who have had a similar experience.
Regarding work experience related documents, reference letter is a mandatory document and if it has all the required information mentioned below, it should be good enough
- It should be an official document printed on company letterhead (must include the applicant’s name, the company’s contact information [address, telephone number and email address], and the name, title and signature of the immediate supervisor or personnel officer at the company),
- It should indicate all positions held while employed at the company and must include the following details: job title, duties and responsibilities, job status (if current job), dates worked for the company, number of work hours per week and annual salary plus benefits
In case some required information is missing in the reference letter, that is when other supporting documents are required. If you do not have salary slips you can show bank statements which show salary credits in the bank account
For Canadian work experience, you will need the following in addition to reference letters.
- copies of T4 tax information slips and notices of assessment issued by the Canada Revenue Agency (the time period for these documents should reflect the work experience timeframe [e.g., work experience from 2006 to 2008 requires only documents from those calendar years]).
