I dont think there is definite/verifiable answer to that.
1 you may mention unemployed and probably upload/send a LOE explaining that.
2. you can say you are employed and send your last offer letter. I dont think they are verifying it. (my opinion)
Ideally, they shouldnt be asking for our employment records as they have no business there. BUT i guess the babu metality still thrives.

Guys I need guidance based on real time experience
I'm currently unemployed and I'm confused filling up the employment details section of the online OCI application. Can anyone guide me which option to choose from the drop down menu and what online documents need to be uploaded along with physical documents?
Occupation ?
Employer details?
Employer address?... etc...
