Right, if you are on a temporary work permit, you can only work for that employer. I do not know if there is a possibility to get a 2nd work permit for a part time job. I do not know anybody who is doing that. My coworkers are working for my employer only, they can get plenty of overtime if they want it. If they change jobs, they get a new LMO and new permit for a new employer, drive to the border to activate and from that moment on can only work for the new employer, not for the old one anymore.

The spouse of a temporary worker would have an open permit and be able to take any job or many jobs.

Of course there is always a possiblity to work under the table but if you get caught, that would get you in trouble with immigration.

Once you are a PR, you can work as many jobs as you want.

that means one must choose employer carefully so that he/she doesn't feel like changing employer at least before 2 years.

Yes, choose employer carefully so you can stay there until you get PR. Most employers are not so horrible that you can not stay for 2 years but if they are, you still have the option to change, you just have to find a job and wait a couple of months to get the work permit changed. If you are in the middle of PNP application and decide to change jobs, your application may be cancelled and you will have to apply again with a new employer.
